Hearty Vegetable Soup




I am making this soup today, it is one of my favorites. I am out of barley so, I will substitute with orzo.

1 15 oz can small white beans 1 15 oz cans tomato sauce 32 oz chicken stock 2-3 potatoes peeled and diced One small onion chopped 1 turnip 1 parsnip 2 carrots 2 stalks of celery 1 bunch flat leaf parsley 1 bunch Dill ½ cup of barley ½ tsp black pepper     Sautee onion in olive oil until translucent. Rustic Tagliatelle


6 tablespoons olive oil
2 large onions, peeled and finely sliced
1 carrot, peeled and finely grated
3 cloves garlic, whole
8 ounces ground pork, beef or lamb
3/4 cup plus 1 tablespoon white wine
 2 cups vegetable stock
14 ounces tagliatelle pasta
black pepper
1/2 cup Italian flat leaf parsley
1 cup  freshly grated pecorino romano cheese
  1. In a large saucepan, heat the olive oil and sauté the garlic, onions, carrot, over medium heat, stirring occasionally with a wooden spoon, until softened and golden, 5 minutes.
  2. Add the pork,beef or lamb and mix well, allowing the meat to crumble. Cook, stirring frequently, until the meat has browned all over, 5 minutes.
  3. Pour in the wine and cook for another 3 minutes to allow the alcohol to evaporate. Season with salt and pepper and pour in the stock.

Pot Roast


This roast is wonderful and flavorful…serve with homemade mashed potatoes and biscuits!
1 3-5 pound chuck roast
2 onions, chopped
4- 6 carrots, peeled and chopped
3 cloves of garlic, peeled and chopped
3 sprigs fresh thyme
3 sprigs fresh rosemary
1 cup beef stock
1 cup chicken stock
1 cup red wine
kosher salt
black pepper
flour for dredging
Preheat oven to 325 degrees – season roast generously with kosher salt and black pepper, dredge in flour. In a Dutch Oven, heat 2 Tbsp olive oil, add roast and sear all sides until nicely browned. Remove roast to a plate. Add onions, carrots and garlic to Dutch Oven with 1 1/2 tsp salt and 1/2 tsp pepper. Cook over medium heat for about 10-12 minutes, stirring occasionally. Place roast back in Dutch oven. Add 1 cup beef stock, 1 cup chicken stock, 1 cup red wine, 3 sprigs rosemary…

This recipe comes courtesy of my husband Jason and is perfect for this time of year.

one 2-3 pound boneless pork loin

1/2 cup fresh rosemary

2 cups apple cider

For glaze

3 cups apple cider

1 cup apple cider vinegar

1/4 cup maple syrup

1/4 cup honey

1/4 cup brown sugar

For slaw

4 apples

1 carrot

1 head cabbage

1 cup mayo

1 tbsp honey

1 tbsp dijon mustard

1/2 cup dried cranberries



For sweet potato wedges

4-6 sweet potatoes

1 stick butter butter

1/4 cup brown sugar


PORK- season pork loin with oil, salt, pepper and fresh rosemary. Place on sheet pan and add 2 cups apple cider and roast until internal temperature of 145-150 (about 35 min)

How To Generate A Positive Body Image In Our Children


I believe this is such an important subject. Negative body image can lead to eating disorders, depression and a lifetime of poor self esteem. It is our job as parents to foster a healthy and positive outlook when it comes to our bodies. Here are some tips on how we can do just that!
  • Never call yourself fat or say negative things about your body.
  • Talk about what your body can do not just how it looks
  • Value people for who they are, not how they look
  • When you see someone in public or on TV that is not a size “2” but looks wonderful, point out how beautiful they look
  • Keep healthy food choices in the home and cook with fresh ingredients
  • Show your children how they can enjoy treats such as ice cream in moderation

A Beginners Guide To Living A More Joyful Life


  • Wake up each day and decide that today will be a great day regardless of what happens around you and in lieu of others behavior.
  • Stop complaining and wasting your energy on things that you cannot change.

Traffic: Sure you can take a different route or work from home but how feasible is that?Rather than getting worked up take this time to listen to an audio book or listen to peaceful music.

Long Lines: We all know that long lines suck, but I never can understand someone who gets so bent out of shape over this. Take a deep breath or shop online.

Weather: People that constantly complain about the weather baffle me the most. Get out and enjoy it or snuggle up inside and play a board game, cook a great meal or read a fabulous book.

Take a Hike


I love being outside as often as possible regardless of the weather, my children are the same. I have found that when I need a new perspective on things or to clear my head the choice is clear. Go outside. I am lucky enought to live in an area that is filled with natures bounty. The list of things to do is endless…hiking, skiing, fishing, kayaking, rock climbing.


I am also lucky enough to have a core group of friends that enjoy the outdoors as much as I do. We are raising our children to get out and explore because you never know what you might find.


There are days that I probably should stay home and clean more, or wash the ever building stack of laundry. But, there are only so many days in the year that are filled with brilliant color and grand fortune to be discovered…
