Autumn Chicken

4-6 boneless, skinless chicken breasts

2 tablespoons olive oil

2 cloves garlic , crushed

1 1/2 cup chicken broth

1/2 tsp fresh rosemary, chopped (dry is fine if you do not have fresh)

1/4 tsp fresh thyme (dry is fine)

1/4 tsp garlic powder

1 large sweet potato, cut up

1 cup butternut squash, peeled and cut up

1 cup fresh string beans

Heat large skillet …add2 tbsp oil, lightly brown garlic (do not burn)  add chicken until browned. Add broth, rosemary, thyme, garlic powder, potato, squash, and beans. Heat to a boil. Cover and cook over low heat for 20 -30 minutes or until done.
